Place the first 8 ingredients into a blender or food processor. Blend until smooth. Place vegetables in a large sealable bag and pour the marinade in. Seal the bag and toss to coat the vegetables. Marinate for at least 30 minutes in the refrigerator.

Start a charcoal or gas grill and bring to medium high heat.
Once vegetables have marinated begin to build your skewers alternating vegetables and meat equally between 4 wooden skewers. Any leftover marinade can be used to baste the skewers while cooking.

Place the skewers on the hot grill turning until vegetables and meat are cooked and hot.

Remove from the grill and serve over rice.
