* Not all mustard is Paleo approved. Look for minimal ingredients like mustard seed, salt, pepper and healthy oils.
Prepare a gas or charcoal grill to medium high heat.
Begin by adding the ground beef (or buffalo) to a bowl and with your hands incorporate the shallot, garlic powder, salt and pepper. Pinch out 4 ¾ ounces of the meat and working with your hands on a cutting board rolling it out until you have about a 5 to 6 inch log. Continue until you have 6 burgers. Wrap each with one strip of Milton’s Local bacon and secure each end with toothpicks.

Once the grill has reached the desired temperature grill and continuously turn the bacon burgers until they reach your level of doneness. 8-10 minutes for medium. While the burgers are cooking spread some of the mustard on each of the leaves of lettuce. Once burgers are done remove from the grill and allow them to rest for 3-4 minutes.

Remove the toothpicks and place each bacon burger in the lettuce cups and top with cherry tomatoes or any of your paleo friendly toppings.
