Preheat oven to 400° and place the onions and garlic in an oven safe dish. Drizzle with olive oil, sprinkle with salt and pepper and roast in the oven for 30-40 minutes. While the onion and garlic cook steam the cauliflower in a steamer or in a basket over simmering water until soft and tender about 18-20 minutes.

While the cauliflower steams grill sausages on the grill or on a griddle.

Remove onions and garlic from the oven.

Add steamed cauliflower to a food processor along with 4-5 roasted garlic bulbs, almond milk, bacon and clarified butter. Pulse until smooth and combined.
Serve the warm sausage with the cauliflower mash and roasted onions.
